Eggless Chocolate Banana Walnut Cake image

As often I bake tea time cakes for my family & everyone enjoy a slice of it with a cup of hot tea or coffee. I just love baking in weekend and stock it for a week. Number Of Ingredients 11

1 Cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/4 cup Olive Oil
1/4 cup Jaggery powder
2 ripe bananas ( Medium size)
2 tbsp Cocoa Powder
1/4 cup Curd / yogurt at room temperature
1/4 tsp Salt
1/4 cup chopped walnuts
1/2 tsp Vanilla essence

Steps:

  • Preheat oven at 180 degree Celsius for 10 minutes.
  • In a mixing bowl, add whole wheat flour, cocoa powder, baking powder, baking soda & salt. Mix it well & keep it aside.
  • In another bowl, add mash banana, curd, jaggery powder, oil & vanilla essence. Whisk it well all together.
  • Now add the dry ingredients to the wet ingredients and gently fold it. Then add chopped walnuts & fold it in.
  • Grease cake tin with little oil & pour the cake batter. Tap it twice to remove air bubbles.
  • Bake the cake in preheated oven at 180 degree Celsius for 35 to 40 minutes.
  • After 40 minutes check the cake at the centre with a skewer and it comes out clean.
  • Once baked, cool down the cake completely on a wire rack.
  • Now enjoy a slice of the cake with a cup of hot tea or coffee.
