Eclair Cake image

I noticed all the recipes on here for Eclair Cake are made with graham crackers. I've always made it with Saltines and it's delicious.

Number Of Ingredients 4

2 package(s) instant french vanilla pudding
1 - 8 oz cool whip
- saltine crackers with salt (approx. 1 1/2 stacks)
1 can(s) dark chocolate frosting

Steps:

  • Mix pudding according to directions on the box. Chill for 10 - 15 min. Add Cool Whip to pudding.
  • Place a layer of saltines on the bottom of a 13x9 pan. Add a layer of pudding. Add another layer of crackers and another layer of pudding. Top with a layer of crackers.
  • Microwave the frosting for about 30 seconds or until smooth. Spread on top of crackers. Chill for 1 hour.
