Easy Zucchini Casserole image

When life hands you a bumper crop of zucchini, make this easy casserole!

Number Of Ingredients 9

1 egg yolk
1 cup sour cream
1 Tbsp. finely chopped onions
1/2 tsp. paprika
3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
5 zucchini, thinly sliced
4 tomatoes, sliced
2 cups croutons
1 Tbsp. butter, cut into small pieces

Steps:

  • Heat oven to 350°F.
  • Mix first 4 ingredients in medium bowl until blended. Stir in VELVEETA.
  • Spread zucchini onto bottom of 13x9-inch pan sprayed with cooking spray; cover with sour cream mixture. Top with remaining ingredients.
  • Bake 45 min. or until zucchini is tender and casserole is heated through.
