2 lb ground beef, lean
4 c green bell peppers, diced or sliced
3 c bell peppers, red, yellow and orange, diced (1 of each color)
2 bag(s) uncle ben's whole grain medley, brown & wild rice
2 can(s) italian sauce, 28 oz. each
1 medium onion, diced
1 box beef broth, 32 oz.
3 c water
1 tsp garlic powder
2 tsp oregano, dried
1 Tbsp italian seasoning
2 tsp black pepper
salt to taste

Steps:

  • 1. Fry up your beef & sauté onions at the same time then drain off grease and place in a large soup pot.
  • 2. Dice or slice up all your peppers and place in the soup pot.
  • 3. Add your sauce and beef broth.
  • 4. Add the already cooked rice to the pot also. It is a rice for the microwave but perfect to use in a soup that you want to fix up quickly.
  • 5. Cook for 45 minutes to an hour on the stovetop over medium heat until peppers are tender. I stirred it occasionally and covered the pot while it cooked.
  • 6. Serve up with some yummy biscuits, garlic bread or your favorite crackers.
