Easy Slow Cooker French Onion Roast and Vegetables image

Nothing fancy here. Just easy, delicious, slow cooked comfort food.

Number Of Ingredients 8

2-4 pound(s) beef roast (chuck or round is what i usually use)
1/2 tablespoon(s) seasoning blend such as weber's smoky truffle or montreal steak seasoning
1/4 cup(s) all purpose flour
2 can(s) condensed french onion soup (red & white can)
8-10 medium carrots, peeled, cut into chunks* (see *note)
1 large sweet onion, peeled & sliced or cut into chunks
8 medium potatoes
salt and pepper to taste

Steps:

  • Place liner in slow cooker, if using. Place roast in slow cooker and season each side with your preferred seasoning blend. Set slow cooker on high.
  • Add carrots and onions around the roast. Place lid on cooker. * NOTE: Omit the carrots if you don't care for carrot flavor in your gravy.
  • In a medium bowl, whisk together 1/4 cup all purpose flour and one can of onion soup until no large lumps of flour remain; add remaining can of onion soup, whisking until well combined.
  • Pour soup mixture over roast and vegetables in slow cooker.
  • Place whole peeled potatoes around roast (on top of carrots and onions.) Sprinkle with salt and pepper to taste. Place lid on slow cooker. Cook on high for about 5-6 hours, or on low for 8 hours (times are approximate and depends on size of roast and how hot your slow cooker gets.)
  • Serve hot, preferably with warm dinner rolls to sop up the gravy. Cover and refrigerate leftovers.
