EASY SALMON AND VEGETABLE CASSEROLE image

1 C. steamed cauliflower florets
1 C. steamed celery
1 1/2 C. dry macaroni
1 C. Monterey Jack cheese (grated)
1/4 C. butter
5 to 6 Tbsp. All purpose flour
Bread crumbs or wheat germ for topping

Steps:

  • Preheat oven to 350 (176 C) degrees Fahrenheit Wash and prep vegetables and then steam for 10 minutes Cook macaroni according to package directions and rinse cooked macaroni in a colander when done under cold running water Layer cooked macaroni in the bottom of casserole dish Combine flour and butter in a medium saucepan and cook over medium heat combining flour and butter to make a roux then add milk and grated cheese cooking to desired thickness for sauce and set aside Add vegetables and salmon to macaroni and stir sauce in the mixture coating all the ingredients well Sprinkle topping over veggies and salmon then bake for 10 to 15 minutes or until lightly browned on top.
