Easy Rotisserie Chicken Bake Casserole image

This chicken and broccoli casserole is a crowd pleasing comfort food. The blend of hot creamy sauce and golden crunchy topping makes even children come back for a second helping! This is even better the next day if there is any leftover.

1 large 1 fully cooked rotissorie chicken picked off the bone in small pcs.
2 bag(s) broccoli florets
2 can(s) cream of chicken soup
1 c reg or fat free mayo
1 loaf of store packaged fresh garlic bread
1 c chicken broth
2 Tb Tbsp lemon juice concentrate
1/2 tsp black pepper
1 tsp garlic salt
1 pkg 8 oz triple cheddar cheese blend.

Steps:

  • 1. Use 1 large glass lasagna pan. Spray with cooking spray.
  • 2. Place frozen or partially thawed broccoli florets in bottom of glass dish.
  • 3. Place cooked rotisserie chicken pcs on top of broccoli.
  • 4. In a bowl -add the cream of chicken soup , chicken broth, lemon juice, mayo, pepper, and garlic salt. Wisk together to blend.
  • 5. Pour mixture evenly over chicken and broccoli.
  • 6. Place uncovered in oven at 375 for 35 mins till bubbling.
  • 7. While chicken and broccoli is in the oven - open the garlic bread and spread the butter evenly on both sides before breaking into pcs.
  • 8. Break bread into small pcs or pulse to crumbs in food processor.
  • 9. When chicken is hot and bubbly remove from the oven. Sprinkle 3 cheese blend over hot chicken.
  • 10. Add bread crumbs over top of the cheese.
  • 11. Bake another 20 minutes until golden brown.
