Easy Overnight Coffee Cake image

I've had this recipe so long, I can't remember where I got it. It is a Christmas tradition in our family; prepared on Christmas Eve and popped in the oven Christmas morning. My brother and I started using it many years ago to save my mother from cooking breakfast AND Christmas Dinner as she always had.

1 pkg (about 24, uncooked) frozen yeast dinner rolls
1/2 c sugar
1-1/2 tsp cinnamon
1/2 c pecans, chopped
1/2 c brown sugar, light
1-4oz. pkg butterscotch pudding mix, not instant
1 stick butter or margarine, sliced in small squares

Steps:

  • 1. Stir together all ingredients except rolls and butter (or margarine).
  • 2. Place frozen yeast rolls in a bundt pan which has been sprayed with PAM.
  • 3. Add dry ingredients; Being sure ingredients drift down between the rolls.
  • 4. Tuck/scatter evenly sliced butter (or margarine) among rolls and dry ingredients.
  • 5. Cover with a clean towel and set to rise overnight.
  • 6. Bake in a 350 degree oven for 15 minutes.
  • 7. Cover with foil and continue baking for 15 more minutes.
  • 8. Remove from oven, remove foil, let cool 5 to 10 minutes before turning onto plate.
