Easy Miracle Whip Chicken Bake image

Number Of Ingredients 8

2 cups instant white rice, uncooked
2 cups boiling water
1 pkg. (8 oz.) KRAFT Shredded Pepper Jack Cheese, divided
1/2 cup MIRACLE WHIP Dressing, divided
4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
4 small boneless skinless chicken breasts (1 lb.)
1/2 cup chopped tomatoes
1 Tbsp. sliced green onions

Steps:

  • Heat oven to 350°F.
  • Combine rice, boiling water, 1 cup cheese and 1/4 cup dressing in 8-inch square baking dish sprayed with cooking spray. Let stand until ready to use.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add chicken to reserved drippings; cook 3 min. on each side or until evenly browned on both sides. Place over rice mixture.
  • Bake 25 to 30 min. or until chicken is done (165°F). Meanwhile, combine remaining cheese and dressing.
  • Top chicken with bacon, tomatoes and cheese mixture; bake 5 min. or until cheese is melted. Sprinkle with onions.
