Steps:
- Heat oven to 350°F.
- Combine rice, boiling water, 1 cup cheese and 1/4 cup dressing in 8-inch square baking dish sprayed with cooking spray. Let stand until ready to use.
- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
- Add chicken to reserved drippings; cook 3 min. on each side or until evenly browned on both sides. Place over rice mixture.
- Bake 25 to 30 min. or until chicken is done (165°F). Meanwhile, combine remaining cheese and dressing.
- Top chicken with bacon, tomatoes and cheese mixture; bake 5 min. or until cheese is melted. Sprinkle with onions.
