Steps:
- 1. Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl
- 2. Heat the oil in a large heavy skillet over medium heat.
- 3. Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.
- 4. Place the coated chicken strips into the hot oil.
- 5. Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.
- 6. Drain on paper towels and serve.
