Easy Corn Salsa image

Ummmmm, Yummy, Yummy!!! I got this recipe from my BFF neighbor at her 50th Birthday party. It was sooooo good I had to move the bowl away from where I was sitting so I wouldn't eat it all! It is really easy to make and most ingredients are in your pantry right now. It is cool, crisp and delicious! Enjoy!!!

Number Of Ingredients 7

1 (15 ounce) can sweet corn (drained)
1 (15 ounce) can black beans (drained, rinsed)
1 (10 ounce) can rotel (I prefer "hot", but original recipe calls for "mild")
1 small red onion, diced
1/4-1/2 cup cilantro, finely chopped
1 garlic clove, finely chopped
salt and pepper

Steps:

  • Combine all ingredients in a medium bowl. Mix well and chill for at least 1 hour before serving. Serve with Tortilla chips or Pita chips. Refrigerate left overs for up to 3 days.
