Easy Cinnamon Ice Cream image

Delicious, spicy and light, you will soon see why this is a summertime favourite.

3 c milk
1 c cream
1 stick large, cinnamon
1 3 " strip lemon,
6 medium egg yolks
1 1/2 c white sugar
pinch sea salt
1 tsp pure vanilla extract,

Steps:

  • 1. In a pot add 2 cups of milk, cinnamon stick and lemon peel. Simmer gently, then remove from heat, and set aside until required.
  • 2. In a small bowl add the egg yolks and gently beat. Slowly add in the remaining milk, cream, sugar and salt, mix well.
  • 3. Add the egg mixture in the bowl to the pot of scented milk. Heat on low and bring to a simmer, stirring constantly. Do not allow to BOIL.
  • 4. Take the mixture off the heat and remove and discard the cinnamon and lemon rind. Add in the vanilla extract and mix well.
  • 5. Allow the ice cream mixture to cool. Pour the cooled ice cream mixture into an ice cream maker, and freeze according to the manufacturer's instructions.
