Easy Cinnamon Bundt Cake image

This is a bundt cake that is yummy, easy to make, and works great for a party or to bring to a potluck. For a lighter version, I like to substite applesauce for the oil and it works great.

4 eggs
1 box spice cake mix
1/2 c oil
1 pkg sugar free instant vanilla pudding (small)
1 c light sour cream
5 Tbsp sugar
2 tsp cinnamon
1/2 c chopped pecans

Steps:

  • 1. Mix the first 5 ingredients (up to the sour cream) together with a whisk (it will be very thick.) Spray bundt pan with butter spray and put half the batter in the pan.
  • 2. In a small bowl, mix sugar, cinnamon, and pecans. Sprinkle half of this nut mixture on the cake mixture. Pour the rest of the batter on top and spread around. Sprinkle the remaining nut mixture on top.
  • 3. Bake 350 degrees for 1 hour. Let cool. Turn onto a large plate so the nut mixture shows on top. Serve warm with butter or cream cheese.
