Easy, Basic Guacamole image

I have a recipe for salsa verde and guacamole posted from a friend who grew up in Mexico City, but I can't always find good tomatillos. This recipe is just as good, using just a few, fresh ingredients. My husband's favorite snack. Prep time does not include chill time.

GUACAMOLE
3 extra large avocados
2 tsp garlic (i like garlic paste found in the produce section)
1/2 cup red onion, finely minced
1/2-3/4 tsp salt, or to taste
1 tb olive oil
1 tsp finely minced jalapeno, totally optional, or to taste ( i usually leave this out)
juice from 1/2 to 1 lime, or to taste
GARNISHES
dollop of sour cream
a few chopped grape tomatoes
a tablespoon or two of chopped cilantro, optional

Steps:

  • 1. Remove avocados from shells, saving pits. Mash two and chop the third. (For creamy guac, mash all three.) Place in medium glass bowl.
  • 2. Add onion, salt, garlic, lime juice, olive oil and jalapeno, if using. Mix thoroughly. Push whole pits gently into guac. (This prevents browning.) Press plastic wrap onto top of guac, pressing lightly. Then, cover the entire bowl and refrigerate for 2 hours to allow flavors to blend.
  • 3. When ready to serve, remove pits, stir and place in serving bowl. Top with a dollop of sour cream, then chopped grape tomatoes, then sprinkle with chopped cilantro, if using. Serve with your favorite tortilla chips.
