Easy and Quick One Pan Family Dinner Recipe image

Number Of Ingredients 12

1 bell pepper (red, yellow, or orange)
1/2 white onion
1 clove of garlic
1 tbsp of olive oil
1 small can of crushed tomatoes
2 tsp paprika
2 tsp cumin powder
3 eggs (depending on size of the pan)
Salt & pepper to taste
Feta cheese
Parsley to garnish
Chili flakes to garnish

Steps:

  • Heat oil in a pan on medium heat
  • Dice the pepper and onion. Mince the garlic clove.
  • Add your pepper and onion to the pan. Sauté until softened then add the garlic.
  • Once softened, pour in a small can of crushed tomatoes. You want enough to fill the pan.
  • Season with paprika, cumin, salt and pepper then mix it all together.
  • Turn the heat down to low and place a lid over the pan to let the tomato base come to a slight boil.
  • Once boiling, remove the lid and create small dips/wells in the sauce using a spoon.
  • Crack the eggs into these areas then cover with a lid until the egg whites set.
  • Once the eggs are cooked to your liking, take off heat and sprinkle with chili flakes, fresh parsley, and feta cheese.
  • Serve with pita, toast, or bagel if desired and enjoy!
