DUTCH BABY PANCAKE (MOM'S RECIPE) image

2 eggs beaten l/2 tsp. salt
l tsp sugar l/4 cup flour 1/2 cup milk

Steps:

  • Preheat oven to 450 degrees. Beat eggs, add salt, sugar, flour, and milk, beating continuously. Beat until light and well blended with hand or electric beater. (Electric preferred). Place 1 Tbsp butter in 9 or 12 inch iron skillet. Cover entire surface with butter. Heat the skillet to high. Pour mixture in skillet for l minute for bottom to cook. Then place skillet in oven at 450 degrees for 5 minutes. After 5 minutes, reduce heat to 375 degrees and cook l0 more minutes until golden brown. It will have risen but when you take it out of the oven it will fall. Serve with fresh squeezed lemon juice and powdered sugar. We like syrup....... Note: this is the recipe from the book. Heat at first on oven burner, then skillet goes in oven. Be sure and use oven mitts or pads to transfer into or take out of oven. Also preheat the over to 400 or so and turn when pancake goes in.
