Steps:
- Rinse and pull strings from sides of beans if necessary. Snap off ends and break each bean into bite-size pieces, about 1 to 2 inches long. In a medium saucepan over high heat, place beans,* water, ham hock and onion. Bring to a boil reduce heat to low and simmer for 1 hour or until ham begins to get tender.Add potatoes to saucepan and continue to cook for 45 minutes to 1 hour or until potatoes are fork tender. Remove ham hock and dice meat. Return meat to the bean mixture. Simmer for 5 to 10 minutes. Add salt and pepper if needed before serving.* If beans are young and tender, cook ham hock first, then add beans with potatoes.
