Double Dogs for Two image

'WOW' was the husband's response at the first bite! He walked over to me, afterwards, with 2 thumbs up and said "You need to make that again!" It went on the favorites list immediately! Zenner chicken sausage can be found in the butcher case at the grocery store.

2 - zenner brand chicken sausage brats
½ cup(s) sliced mushrooms
¼ cup(s) sweet onions, chopped
2 tablespoon(s) real butter or ghee
¼ cup(s) half and half
2½ teaspoon(s) dijon mustard
¼ teaspoon(s) garlic powder
2 tablespoon(s) parmesan cheese
1 - tomato, chopped
1 medium sweet potato,washed & punctured with fork
1 - avocado, sliced or cubed
2 - eggs-any way you like them
THIS WORKS FOR BREAKFAST, LUNCH OR DINNER! SUPER VERSATILITY MAKES THIS EASY AND ADAPTABLE TO WHATEVER YOU HAVE ON HAND.

Steps:

  • Cook sweet potato to slightly soften it. Cut into thick slices and lay in a greased 1½ qt. baking dish.
  • Cut sausages in half lengthwise; brown in skillet. Lay vertically over the potatoes.
  • Saute' the onions in butter in a medium saucepan. Add the mushrooms and garlic powder. Stir in half & half and mustard; bring to a boil. Cook and stir until slightly thickened. Pour over sausages, sprinkle with shaved Parmesan cheese.
  • Bake, uncovered at 450°F. for 10-15 minutes or until cheese is melted.
  • Garnish with the tomatoes and avocado and eggs any way you like them. Goldenrod eggs would be beautiful!
