DOUBLE BLUEBERRY MUFFINS image

Yield 12 or 24/30 reg or mini

Number Of Ingredients 9

1 1/3 c. flour
1/3 c. sugar
1 tbsp baking powder
1 tsp salt
1 egg
1 c milk
1/3 c butter or marg, melted
1 1/2 c blueberry cereal (I like Paul Newman's)
3/4 c fresh or frozen blueberries

Steps:

  • Heat oven to 400. Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in cereal and blueberries. Spoon batter into greased or papered muffin pan, fill 2/3 full. Bake 20 min til golden brown. Serve warm. You can add 1/4 c semi-sweet or white chocolate bits to batter just before baking or add 1 1/2 tsp grated orange or lemon peal to egg mixture before mixing with flour. You can also use mini muffins 24-30. Bake only 15 minutes
