Dirty Rice Lightened Up image

I love dirty rice and wanted to lower the fat and calories in it. I think this turned out very well. Using olive oil, ground turkey, ground pork and brown rice makes it a healthier verson.

Number Of Ingredients 15

1/2 lb chicken liver
1 lb ground turkey
1 lb ground pork
1 large onion
2 stalks celery
2 garlic cloves
1 green bell pepper
1 bunch green onion
2 tablespoons olive oil
1/2 teaspoon cayenne pepper
1 tablespoon creole seasoning
salt
black pepper
4 cups chicken broth
2 cups brown rice

Steps:

  • Chop the livers as small as you can, I used a food processor. Chop the onions, celery and bell pepper and mince the garlic. In a large pan add the oil, the onions, celery, garlic and bell pepper and saute until transparent. Add the livers, ground turkey and pork and cook until done. Add the spices, Chicken Broth, and rice and cook until rice is done.
