Deliciously Plain Ol' Fashioned Muffins image

My mom made these for us for a treat, usually on a Saturday or a Sunday morning. I loved them; and they're not like todays muffins that are really cake. 1 egg
1/2 c milk
1/4 c shortening (i use butterflavored crisco)
1 1/2 c all purpose flour
1/2 c granulated sugar
2 tsp baking powder
1/2 tsp salt

Steps:

  • 1. Heat oven to 400 degrees. Spray muffin cups (2 3/4" diameter) of muffin pan with butter flavored vegetable spray or grease with shortening, lightly, or of course you can use paper cups that go in the muffin tins.
  • 2. Beat egg, stir in milk and oil. In a separate bowl, mix the dry ingredients, and make a well in the center.
  • 3. Pour the wet ingredients into the dry ingredients, and stir well just until moistened. Batter should be lumpy.
  • 4. Fill muffin cups 2/3 full. Bake for 20-25 minutes or until golden brown. Immediately remove from pan to wire rack. Serve hot or warm, with butter, preserves, jelly or honey.
