Steps:
- 1. Preheat oven to 375 degrees. In an ovenproof skillet or dutch oven , stir butter and honey over medium heat, until butter is melted.
- 2. Remove any silver skin from the loin.
- 3. Liberally sprinkle loin with cayenne pepper, Cajun seasoning and pepper.
- 4. Brown each side of the loin for about 5 minutes in the honey butter. Making sure not to burn the honey. Lower the heat if honey begins to burn.
- 5. Now, place the skillet in the oven, uncovered for 25 - 30 minutes or until pork is no longer pink. Do not over cook.
- 6. When the loin is finished; remove to a serving platter, cover with foil and let rest while you cook down the remaining honey/butter sauce.
- 7. In the same pan, add the water, scraping the bottom of pan to get any browned bits loosened. Simmer for about 5 minutes, until sauce is reduced and thickening. ( sauce will be an auburn color )
- 8. Now, slice your pork, and drizzle with the sauce. Enjoy!! It's delicious!!!
