Deep Fried Devil Eggs image

I was'nt a fan of devil eggs, but once I threw them in the deep fryer, they took on a whole new life of it's own. Everybody loves them!

1 doz eggs
1/4 c mayonnaise
1 Tbsp dijon mustard
1 tsp lemon zest, grated
1 Tbsp chives, chopped
1-2 dash(es) hot pepper sauce
salt and pepper to taste
2 1/2 c all purpose flour
2 1/2 c panko bread crumbs
3 eggs, beaten
peanut oil
fresh parsley for garnish

Steps:

  • 1. Add eggs to a large saucepan with cold water and bring to a boil. Remove from heat and let sit in water 14 min. Peel and slice eggs lengthwise and remove yokes into a bowl. Add mayo, mustard, lemon zest, chives, hot sauce and salt and pepper. Mash together w/wooden spoon,(taste and adjust seasoning).Fill egg yoke mixture in egg white. Heat deep fryer 350 degrees. In a bowl add flour, season w/salt and pepper, in another bowl beaten eggs, in third bowl add panko. Dip eggs in flour, then egg mixture and finally into the panko. Gently drop eggs into the hot oil and fry until golden brown. Remove to a sheet pan lined with parchment paper or paper towel. Season w/ salt and pepper and garnish w/parsley.
