CURRIED SPLIT PEA SOUP image

Yield 4-6 bowls

Number Of Ingredients 12

1 medium onion
4 strips bacon (optional)
1 clove garlic
1 cup dried yellow split peas
5 cups water or broth
1 large carrot
2 stalks celery
1 1lb can tomatoes, chopped
1 tsp salt (omit if using canned broth)
1 tsp curry powder
1/4 tsp pepper
parsley (optional)

Steps:

  • Chop onion and garlic. Chop bacon (if using). Saute chopped onion, bacon, and garlic in large soup pot. Add rinsed split peas and water (or broth). Cover and simmer one hour, until peas are tender. Process soup using an immersion blender. Add chopped carrot and celery. Add tomatoes and liquid. Season with salt, pepper, and curry powder. Cover and simmer until vegetables are tender (25-30 minutes). Use immersion blender to puree the soup a bit more. Add chopped parsley, if desired.
