Steps:
- Melt butter in pot, Add onion & curry powder. Cook covered at low heat til onions are tender. Peel sqwash, scrape out seeds, chop flesh. Pour chicken stock over cooked onions. Add squash, & apples. Bring to boil. Simmer partially covered, til sqwash & apples are very tender (about 25 min.). Strain. Save stock. Transfer solids into food processor with 1 cup of the stock. Blend until smooth. Return blended squash & stock to pot. Add apple juice to reach desired consistancy. Season with salt & pepper. Heat to serve. Garnish. Enjoy!
