Cucumber Carrot Salad image

Number Of Ingredients 7

1/4 cup(s) sweet chili sauce
2 tablespoon(s) seasoned rice wine vinegar
1 large cucumber, peeled, thinly sliced
1 cup(s) matchstick carrots
1/2 cup(s) presliced green onions
1/2 cup(s) chopped red sweet pepper
1 small tomato chopped for garnish (optional)

Steps:

  • Whisk chili sauce and vinegar in medium bowl until blended.
  • Peel cucumber; cut in half lengthwise and slice. Add cucumber and remaining ingredients to sauce mixture; toss to coat. Chill until ready to serve.
  • Very Good. Double recipe or just use 2 cucumbers.
