Steps:
- Put butter into a 10 inch skillet. Add veggies, cover, lower heat and simmer about 15 minutes (till tender). Remove from heat and add parmesan cheese, egg, salt & pepper. Transfer into a glass pie dish, top with mozzarella and bake at 350 degreet for 30 minutes. Remove, let set for 10 minutes and serve.
