Crunchy Walnut Chicken Salad image

I make this to use in low carb wraps for a great low carb lunch or dinner. Using a Joseph's LC Pita half, 1/2 of a sliced avocado and 1/6th of the chicken salad recipe, it's 9 net carbs each serving for a sandwich. 2 c cooked chicken, diced
1/4 c chopped green bell pepper
2 stalk(s) celery, chopped
1 green onion, green and white part, chopped
1/4 c chopped walnuts
1/2 c mayonnaise
2 Tbsp dry ranch dressing mix
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • 1. In a large bowl, mix all ingredients together and chill at least 2 hours.
