Crunchy Sugar Cookies image

This recipe is from a dear aunt who is now almost 95 and had 15 children! They are so light and crunch that you'll want to make them all the time! I've tried using flavored sugar instead of plain for the dusting and honestly, the original cookie is so delicious that it really doesn't need any enhancements.

1 c powdered sugar
1 c granulated sugar
1 c oil
1 c butter (no substitutions please)
2 eggs
4 c flour
4 Tbsp flour
1 tsp baking soda
1 tsp vanilla extract (use pure if you can)
1 tsp salt
1 tsp cream of tartar
additional granulated sugar for dusting

Steps:

  • 1. Preheat oven to 375 degrees F
  • 2. In a large bowl combine flour, baking soda, salt and cream of tartar. Set aside.
  • 3. In your mixing bowl, combine granulated sugar and butter. Cream until light and fluffy.
  • 4. Once fluffy and light yellow, add eggs one at a time, mixing well.
  • 5. Gradually add powdered sugar and then oil. Mix until well combined.
  • 6. Slowly add flour mixture, combining thoroughly.
  • 7. Finally add vanilla extract and mix well.
  • 8. With small scoop or large tablespoon, portion out mounds of dough onto a prepared cookie sheet. Space them approximately 3 fingers apart.
  • 9. Gently flatten each mound to an evenly round disc. Sprinkle each disk with additional granulated sugar.
  • 10. Bake for 10-12 minutes until golden brown around the edges.
  • 11. Remove to cooling rack to cool completely.
