Crunchy Crumb Apple Pie image

There are lots of apples in this pie, but they cook down during baking. Really good topped with vanilla ice cream. The last time i made this pie My husband and mother inlaw ate it all before I was able to get one slice of it at all.I think I got this recipe actually from womansday in 2003.

1 pie crust
1/2 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup cold butter, cut in small pieces
1/2 cup quick-cooking rolled oats (optional)
7 tart apples, medium to large (about 3 1/4 lb)
1 tablespoon lemon juice
1/2 cup granulated sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • Have a 9-in pie shell in a pie plate and on a baking sheet.
  • Place oven rack in the lowest position in the oven.
  • Heat oven to 450°F.
  • Topping: Mix flour, sugars and cinnamon in a medium bowl. cut in butter (or rub with fingertips) until mixture forms moist, coarse crumbs that clump together.
  • Filling: Peel, halve and core apples. Cut in 1/8-in.-thick slices.
  • place in a large bowl, add lemon juice and toss to coat. mix remaining ingredients in small bowl, sprinkle over apple slices and toss to coat.
  • Layer apples slices in pie shell, mound them higher in the center. Pat topping evenly over apples to form a top crust. Plce pie on baking sheet to catch any drips.
  • Bake 15 minutes. reduce oven temperature to 350 F and bake for 45 minutes longer or until skewwe meets some resistance when center of pie is pierced and topping is golden brown. Cool copletely on wire rack before seving.
