Yield Makes 12 servings, 1/2 cup each.

Number Of Ingredients 7

1 can (14-1/2 oz.) vegetable broth
1 medium red onion, chopped
1/2 cup sliced dried apricots
1 Tbsp. olive oil
1 pkg. (10 oz.) couscous
1 pkg. (2.25 oz.) sliced almonds, toasted
2 Tbsp. chopped fresh mint leaves

Steps:

  • Combine broth, onions, apricots and oil in medium saucepan. Bring to boil on medium-high heat.
  • Stir in couscous; cover. Remove from heat; let stand 5 min. Fluff couscous with fork.
  • Add almonds and mint; mix lightly.
