Crunchy Chicken & Rice Casserole image

Number Of Ingredients 11

1 cup chopped celery
1 tablespoon butter
2 cups cubed cooked chicken
1 1/2 cups cooked rice
1 can cream of chicken soup
3/4 cup mayo
1 can sliced water chestnuts, drained
Salt and pepper to taste
Topping:
1 tablespoon butter, melted
1/2 cup crushed corn flakes

Steps:

  • 1. In a skillet, saute celery in butter until tender. Remove from heat; add the next seven ingredients. Spoon into ungreased 2 1/2 qt. baking dish.
  • 2. Combine melted butter and cornflakes; sprinkle on top of casserole.
  • 3. Bake, uncovered, at 350 degrees F for 30 minutes.
