Steps:
- Saute onions in butter until translucent. Whisk in flour to make a roux, gradually mix in milk to for, a smooth sauce. Cook until sauce thickens to consistency of wallpaper paste. Whisk in sherry and parsley. Fold in ground ham and breadcrumbs. Let simmer 5 minutes, stirring constantly. Season with salt & pepper. Pour into baking dish and refrigerate at least 1 hr. Shape ham mixture into longs about 3/4 in thick and 3 in. long. Dip in egg wash, roll in breadcrumb mixture, repeat. Cover logs with plastic wrap and refrigerate for 2-3 hours (or freeze for later use). Using enough oil to come up to 1/2 of croquetas & fry, turning occasionally until golden brown.
