Crockpot Herbed Artichoke Chicken Recipe image

Number Of Ingredients 14

1 1/2 pounds chicken breasts -- boned and skinned
14 ounces diced tomatoes -- drained
14 ounces artichoke hearts in water -- drained
1 small onion -- chopped
1/2 cup kalamata olive -- pitted and sliced
1 cup chicken broth
1/4 cup white wine
3 tablespoons quick cooking tapioca
2 teaspoons curry powder
1 tablespoon fresh Italian parsley (or 1 teaspoon dried parsley flakes) -- chopped
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Combine all ingredients in crockpot. Mix well. Cover and cook on Low 6 to 8 hours or High 3 1/2 to 4 hours
