Crock Pot Chicken image

This is a favorite of my family that is easily switched up with different seasonings to change the flavor of the chicken. I used a combination of picante sauce and brown sugar or honey and dijon mustard to give us a change. Great for working moms who need the main course finished by the time they get home!

Number Of Ingredients 6

4-8 chicken thighs
salt and pepper to taste
garlic powder to taste
1 onion, chopped or ringed, your choice
1-2 red, green or yellow bell pepper, sliced or chopped
1-4 tsp minced garlic

Steps:

  • 1. Rinse chicken and pat dry with paper towels. Place skin side down in crock pot. Sprinkle salt, pepper and garlic powder over chicken.
  • 2. If you choose to add other flavors, do so before the onions and peppers. Spoon garlic onto chicken. Top with onion rings and bell pepper slices.
  • 3. Place lid on slow cooker and cook for 8 hours on low. When you get home, turn off crock pot and let the chicken sit to keep warm while you throw rice in the cooker and cook a few veggies to go with this. Place the chicken on a serving plate, top with extra onion or pepper for garnish.
