CRISPY APRICOT PORK CHOPS image

1 tbl olive oil
2 slices multigrain bread
4 bone in pork loin chops
salt and pepper
4 tsp apricot jam

Steps:

  • preheat oven to 425 brush rim baking dish w/olive oil tear bread in lg pieces place in food processor pulse to lg crumbs, drizzle w/ oil, pulse again.( 1 1/2) cups. Season chops w/ s&p. Sread 1 side of chop w/ jam, sprinkle w/ crumbs and pat dry. Transfer to pan crumb side up. Bake until crumbs are golden and pork is opaque (150 degrees) 14-16 mins
