This is a recipe, that I created with what I had and thought would be quite flavorful. I wanted something not heavy to serve with my Tailgate Meatballs.The family absolutely loved it. Was super delicious, if I do say so myself. You could add some cooked chicken or shrimp to this for a more complete meal. Enjoy!

Steps:
- Cook pasta according to directions, about 9 minutes once water boils, drain.
- In a med to large skillet, melt butter over med heat. Stir in onion, garlic and mushrooms if using and proscuitto. Cook for 2 - 3 minutes, stirring often.
- Stir in the flour and cook for another minute, making sure not to scorch.
- Whisk in the milk, slowly and bring to a simmer. Continue cooking until becomes bubbly and thickens.
- Remove from burner and stir in the Parmesan cheese, until melted. Stir in the spinach and orzo and toss to coat. Return to burner, add nutmeg, salt & pepper to taste, cook only long enough to heat pasta and wilt the spinach.
- Serve immediately. Delicious!
