CREAMY LEMON-BASIL DRESSING image

.5Cup pasteurized egg yolk
6T dijon mustard
.5 cup water
1T salt
.5tsp black pepper
1Cup lemon juice
4 cups canola oil

Steps:

  • place egg yolks, pepper, salt, water, mustard and lemon juice in a plastic container. With a burr mixer on high speed, slowly emulsify oil into mixture to make mayo. Each day before use, add a chiffonade of fresh basil to each daily portion.
