CREAM OF PUMPKIN SOUP WITH ASIAGO CHEESE image

2 T butter
1/2 C chopped onion
1 tsp. chopped garlic
1 can (15 oz.) 100% pure pumpkin
1 large container (32 oz.) vegetable broth
pinch of nutmeg
salt and white pepper to taste
1 C cream, light or heavy
1/4 C (1 oz.) grated Asiago cheese
1 T chopped Italian (flat-leaf) parsley
Melt the butter in a large saucepan, add the onion, and saute until tender. Add the garlic and saute a few seconds more.
Add the pumpkin, broth, nutmeg, salt and pepper. Stir to combine and simmer for 5 minutes, until the flavors combine.
Stir in the cream; heat through. Stir in the cheese and parsley.
