Cream of Asparagus Soup image

Another enjoyable creamed soup...

Number Of Ingredients 9

6 pound(s) asparagus, cut into 1/4 length
1/2 pound(s) butter
1/2 cup(s) onion, minced
1/2 cup(s) flour
1 gallon milk
1 teaspoon(s) thyme, ground
1 teaspoon(s) white pepper
1/2 teaspoon(s) chicken base diluted with 1/4 cup water
1 quart(s) heavy cream

Steps:

  • Using a very large heavy pot, melt the butter, saute the onion, and add flour to make the roux.
  • Add the rest of the ingredients, except for the cream. Bring to a near simmer.
  • Add the cream, bring to a simmer until fully cooked.
