Cranberry Walnut Fudge image

I created this after seeing another cranberry fudge recipe that I felt was too prone to fail. This one never fails. I give this as Christmas gifts and everybody loves it.

Number Of Ingredients 8

1 lb powdered sugar
1/2 c cocoa powder, i use heresy's special dark
1/2 tsp salt, i use sea salt
1 1/2 tsp vanilla extract
1/4 c whole milk or 1/2 & 1/2
1 stick butter (not margarine)
1/2 c dried cranberries (i use craisins)
1/2 c walnuts, chopped

Steps:

  • 1. Place the powdered sugar, cocoa, salt, milk and vanilla in a microwavable bowl and stir until mixed evenly together. Place stick of butter on top. Microwave on high for 2 minutes.
  • 2. Beat until smooth. Add nuts and cranberries, pour into a wax paper or saran wrap lined loaf pan (or use a decorative container) and refrigerate for 1-2 hours. Cut into squares. (Store in refrigerator in an air tight container. I use a large zip-lock bag.) Yield: 1 1/3 pounds of Fudge.
