CRANBERRY-ORANGE NUT BREAD image

2 C Flour
1-1/2 tsp Baking Powder
1/2 tsp baking soda
1/2 tsp Salt
1 Tbsp Orange Zest
1-1/2 C Cranberries, fresh, chopped
1/2 C Pecans, chopped
1/4 C Butter, softened
1 C Sugar
1 Egg
3/4 C Orange Juice

Steps:

  • Preheat oven to 350°F. Grease and flour 9x5 loaf pan. Whisk together flour, baking powder, baking soda and salt. Add cranberries, pecans and orange zest. Set aside. In a separate bowl, cream together butter, sugar and egg until smooth. Add orange juice and mix thoroughly. Add flour mixture and beat just until moist all the way through. Pour into loaf pan and bake for 1 hour or until toothpick comes out clean.
