6 medium potatoes
1 1/2 cups mayonnaise
3 tablespoons Dijon mustard
1 tablespoon sweet chili sauce
2 cups dried cranberries
4 stalks celery
1/2 red onion
1/4 cup fresh thyme

Steps:

  • boil the potatoes until soft and allow to cool.
  • chop celery and onion.
  • remove stems from thyme.
  • mix everything together.
  • more flavorful if its had time to sit for a few hours, but can be eaten immediately.
