Cranberry and Dried Cherry Relish image

So good - and no cooking required. Prepare the relish at least a day ahead, and add more cardamom before serving if you'd like a stronger flavor. From Bon Appetit, November 2001.

Number Of Ingredients 4

1 12-oz package(s) fresh cranberries
1 cup(s) dried tart cherries (about 5 ounces)
1 cup(s) golden brown sugar, packed
1/2 teaspoon(s) ground cardamom

Steps:

  • Mix all ingredients in large bowl.
  • Place half of mixture in processor. Using on/off turns, process until coarsely chopped. Transfer to medium bowl.
  • Repeat with remaining ingredients. Chill at least 1 day and up to 2 days, stirring occasionally. Makes 2 cups.
