Steps:
- 1. Place the couscous in a bowl with the cold water. 2. Grill the vegetables. Peel and seed the peppers and roughly chop. Slice the zucchini. Roughly chop the asparagus. 3. Add the grilled vegetables, scallions, chillies and herbs to the couscous and mix well. Add the dressing and toss well. Season with salt and pepper. Add a dash of red wine vinegar.
