COUSCOUS WITH CRANBERRIES, PECANS AND MANDARINS image

2 Tbsp olive oil
1 medium onion, finely chopped
1 tsp ground cumin
1 tsp ground ginger
2 1/2 cups chicken or vegetable stock
1/2 cup fresh squeezed Mandarin orange juice
1/2 cup chopped pecans
1 cup dried cranberries
2-3 mandarin orange, peeled, separated into segments, and cut into 1/2 inch pieces
salt and freshly cracked black pepper
1 1/2 cups couscous
1/4 cup chopped fresh parsley

Steps:

  • Heat the oil in a medium-sized pot over medium heat. Add the onions and cook until tender, 4 to 5 minutes. Add the cumin and ginger and cook 1 minute more. Add the stock and mandarin orange juice. Turn up the heat to high and bring to boil. Stir in the pecans, cranberries, mandarin oranges, salt, pepper and couscous. Cover, turn off the heat and let stand 5 minutes. Stir in the parsley and serve, or cool to room temperature and then cover and store in the fridge untl needed. Reheat in the microwave or place in a shallow sided, heatproof dish, add little stock or water to keep it moist, and cover and reheat in a 350 degree oven for 20-25 minutes.
