COUSCOUS-CORN SALAD image

Number Of Ingredients 7

1 cup couscous
2 cups corn kernels (fresh or frozen)
1 cup packed basil leaves, finely chopped
1/2 cup diced, jarred roasted red pepper
1/2 cup diced red onion
2 tbs olive oil
3-5 tbs lemon juice.

Steps:

  • Cook couscous. Transfer to bowl, fluff with a fork and let cool. Simmer corn until tender. Drain well. Add corn, basil, peppers and onions to couscous in large bowl. In small cup, mix oil and lemon juice. Pour over couscous mixture and toss to coat. Season to taste with salt and pepper
