COUSCOUS CAKE image

Yield Makes between 5-8 servings

Number Of Ingredients 7

2 Cups Couscous
5 Cups Apple Juice (or juice of choice)
1 Lemon rind and juice
1 pint berries (any kind, blueberry, stawberry, raspberry etc...)
Glaze:
1 cup fruit juice
1 tablespoon Arrowroot powder

Steps:

  • Bring Apple juice to boil. Add Couscous.Turn temperature to low and cook till almost thick. Add lemon juice and rind. Remove from stove and stir in berries. Pour into a jello mold or baking dish. Cool. For Glaze: bring fruit juice to simmer, mix arrowroot powder with just enough juice to melt. Add to simmering fruit juice and cook for one minute or until juice clears. Spread glaze on top of Couscous cake with a pastry brush, decorate with fresh fruit slices and glaze again. Cut into wedges or squares and serve.
