Easy risotto for a healthy and light dinner

Steps:

  • Fry chopped courgettes in butter for 10 mins. Saute radishes and celery in butter for 10 mins.
  • Add rice to celery and radishes and stir for 2 mins. Add the wine. Add the the stock gradually until the rice is cooked. Add the courgette, lemon zest, lemon juice and some parmesan.
  • Serve sprinkled with uncooked radish slices and parmesan.
