Corn Pudding - MW image

This is from The Cooking Book by the Junior League of Louisville (1979). It's called Peyton's Corn Mousse from Judy Hoge. What I love about it is that it's a microwave recipe. This is my go-to for a quick and easy side dish.

Time 20m

Number Of Ingredients 6

3 Tbsp corn starch
1/4 c milk
2 can(s) corn, cream-style
3 eggs, beaten
1/2 tsp salt
1/2 c sugar

Steps:

  • 1. Grease a 1 1/2 quart casserole (I use a 7x11 inch glass dish, but I've used round ones in the past).
  • 2. Stir cornstarch into milk then blend in rest of ingredients. Pour into prepared dish and put dish into microwave.
  • 3. Cook on HIGH 5 minutes, then stir. Cook on HIGH 5 minutes more, then stir. Cook on HIGH 5 minutes more. Let stand 5 minutes before serving.
  • 4. Alternatively, you can bake this in a 375°F preheated oven for 45-60 minutes; stirring every 15 minutes.
